Artist: Kim Simons
Kim Simons is the talented local artist behind Parksville’s dove (#78) on the Sullivan Catskills Dove Trail, where she has hand‑painted more than a dozen iconic fiberglass sculptures. Her vibrant dove art weaves together regional history, nature, and community—from lakeside sunsets and rail trails to Main Street scenes and animal sanctuaries—celebrating the unique character of each town she visits. In Parksville, her carefully illustrated dove graces the Cultural Arts Center and showcases the area’s scenic charm. Beyond her trail contributions, Kim is also an award‑winning cake and food artist who captured national attention by winning Food Network’s Cake Wars: Star Wars and Holiday Wars competitions, bringing her creativity to both edible and public art.
